Ingredients:

• ½ ripe avocado, mashed
• 1 egg

• Old Man John’s hot honey or wildflower honey, for drizzling
• Salt, to taste (and then a little more)
Instructions:
1. Toast the sourdough until golden brown and crisp.
2. Mash the avocado with a pinch of salt and spread it over the toast.
3. Heat a pan over medium heat and add the hot crispy oil. Sprinkle in the crumbled feta.
4. Crack the egg into the pan, letting the whites bubble and crisp around the edges. Cook until the white is set but the yolk stays soft.
5. Gently place the egg on top of the avocado toast.
6. Drizzle Old Man John’s hot honey (or wildflower honey) over the top.
7. Finish with extra salt—because you know better.
